Noodle cuisines in India are a concept that have revolved around the young minds and evolved with time according to the young India’s taste buds. Noodles have been a staple food from decades for every person who has lived in another town or city especially for studies. For many students, noodles have become a substitute for fast food which requires amble time for cooking. Even years later, when students are successful enough to afford eating out in an expensive restaurants, nothing can be compared to the blissful memory of that aroma of noodles that lingered in their college canteens. Or that from the small stall across the street or the aroma of those hundreds of late night delicious memories you cooked with your roommates. So, this week we bring some finger licking recreated ways of making noodles for all the noodle lovers
1. VEGETABLE NOODLES
For all the pure vegetarians living away from home, this one is a life saver. All you need for a full meal is
- 2 packets of your favorite Maggi Noodles
- 2 and ½ cups of Water
- 2-3 tea spoon Oil
- 2 thinly chopped Green Chilies
- 1 finely chopped Carrot
- A small cup of Green Peas
- 1 Finely chopped Capsicum
- 1 Diced Onion and Salt to Taste
Heat oil in a pan and add green chilies to it and fry. Add diced onion and sauté till the chopped onions turn golden brown. One by one, add all the chopped veggies, sauté for a minute. Add salt to taste and water to ease the process of boiling. Close the lid and let it boil on a medium flame for a minute. After a minute, open the lid and lower the flame. Add the Maggi masala seasoning to the boiling water and mix well. Add Maggi noodles to the boiling masala water. Mix well when the noodles start to soften and become loose. Then close the lid and let it cook on low flame and cook keeping the soup consistency to your liking.
Here comes another one for all the vegetarian tummies.
2. PANEER AND VEGGIE NOODLES
For making this, the process is all the same as the veg noodles. You just have to sauté diced paneer cubes along with the vegetables.
The next in line is my personal favorite. All the cheese lovers this one is specially for you.
3. CHEESE AND CORN NOODLES
These days, the market has so many options for us to choose from, to make corn and cheese noodles, I recommend you to try the new Knorr Italian cheese and herbs noodles. For a lip smacking cheesy snack time all you need is:
- 2 teaspoon Oil
- A small cup of Boiled Corn
- A finely Chopped Onion
- 2 and ½ cups of Water
- ½ tea spoon crushed Black Pepper (optional)
- 1 tea spoon Chili Flakes and 1teaspoon Oregano/Mixed Herbs
- 2 packets of Knorr Cheese and Herbs Noodles. [NOTE: you can also make it with simple Maggi noodle and also add vegetables as per your liking]
- And grated cheese as much as you want (2 cubes are enough though)
Heat the oil in a pan and put finely chopped Onion on the pan. Fry until it turns golden. Then add boiled corn and sauté for a minute. Add ½ tea spoon black Pepper and mix well. Add water and salt to taste, on a medium flame. Close the lid and let it boil. As the water starts boiling, lower the flame and add the instant seasoning provided with the noodles. Stir well so that no lumps are formed. Then add the noodles to the boiling water. As the noodles start to loose, give it a stir and add the grated cheese, add chili flakes and mixed herbs too. Mix well and let it cook. Garnish with some grated cheese and serve.
Next in the our list is the simplest of all.
4. MAYO-CHEESE NOODLES
Even mayo-cheese noodles can be made with the Knorr cheese and herbs noodles or simple Maggie noodle if you are a hardcore Maggi lover. To make these super simple and creamy noodles, you need:
- 2 packets of Maggi or Knorr cheese and herb noodles
- 2 table spoon Mayonnaise (plain preferably)
- 1 tea spoon Chili flakes
- Grated cheese (2 cubes)
- Water 2 and ½ cups
- And salt to taste
Boil 2 and ½ cups of water in a pan and add a pinch of salt. As the water boils, lower the flame and add the seasoning provided in the noodle pack. Stir well and slowly, so that no lumps are formed. Add the noodles to the boiling water. Close the lid and let it cook for a minute on low flame. After it is cooked well, add chili flakes and mayonnaise and mix well. Add the grated cheese and mix well. Keep the consistency as creamy as possible. Garnish with some grated cheese and serve.

5. CHICKEN SOUPY NOODLES
For this one you need:
- Boneless chicken breast chopped into small/medium pieces. (As you prefer)
- 4 tea spoons of Oil
- 1 Finely chopped Onion
- 1 finely chopped Tomato
- 1 finely chopped Carrot
- 3 cups of Water
- ½ tea spoon of crushed Black Pepper
- Salt to taste
- 2 packets of Masala Maggi
To make a nice soupy noodle, we first need to prepare chicken stock which is very simple if you follow the steps given below:
Heat 2 tea spoons of oil in a pan and add the finely chopped onion. As the onion starts turning brown, add diced chicken to it. Add salt to taste and sauté. Now add the chopped tomato, mix well. When you see the chicken has started appearing white, add all of the chopped carrot and crushed black pepper. Sauté well for a minute on a medium flame. When you see the chicken turning slightly brown, add three cups of water. Close the lid and let it cook on a low flame for 10-15 minutes. After 15 minutes, you can see the water has reduced and the chicken has cooked well. Add the Maggi seasoning from the packet to the boiling water and mix well. Let it simmer for a minute and add the noodle to the boiling water. Close the lid and cook for another 3-4 minutes on a low flame.
6. SCHEZWAN NOODLES
Doesn’t your mouth start watering as soon as you read the name? Of course it would, as we all love that pungent flavor noodles. Chings has made it even more easier for us to have schezwan noodles a home whenever we want. But to make a fuller meal, we can always add a twist.
Heat 2-3 tea spoons of oil in a pan.
Add to it the Diced onions, 1 tea spoon ginger garlic paste, capsicum, chopped carrot. Once the veggies are fried, add 2 tea spoons of soy sauce and 1 tea spoon of schezwan sauce. Sauté well and add a pinch of salt. Add two cups of water and the seasoning from Chings schezwan noodles pack. Add the noodles as the water boil and cook well.
