Manchurian Soup or, Manchow Soup is a popular Indo-Chinese cuisine that is now very popular in India as well. It is one of the most popular soup recipes every soup lover can’t resist having. I love a bowl of Manchow soup during the chilly winter days. This cuisine can be found in every Indian-Chinese restaurant menu. Today, I will give you some advice to make a boring Manchurian soup much yummier and healthier as well.

Preparation

First of all, we need to make fried noodles which will go on top as a garnishing stuff at the end. For that, we need to boil the noodles and then leave it for some time to dry out. Then we need to deep fry the noodles. Now, we need to make the cornstarch slurry. Take 1 tablespoon cornstarch in a small bowl and then make smooth paste of it by adding ¼ cup of water. Simultaneously, prepare all the veggies and rest of the ingredients separately.

How to make a healthy and tasty Veg Manchurian Soup

Pour 1 tablespoon oil in a saucepan and heat it on medium heat.
Once the oil is heated, add 1½ teaspoons of chopped ginger, 1½ teaspoons of chopped garlic,1 finely chopped green chilli, 1 tablespoon of finely chopped celery and 2-3 tablespoons of finely chopped green onions (white part only). Saute for about 2 minutes. Then add some veggies like ¼ cup Cabbage chopped finely, ¼ cup Carrot chopped finely, ¼ cup Capsicum chopped finely and ¼ cup Green Beans chopped finely. Mix and cook for 2-3 minutes.

Now add salt and ¼ teaspoon black pepper powder to taste and then stir well.
Now add the vegetable stock or water, and leave it for some time until it starts boiling. When it starts boiling, let it simmer for 2-3 minutes. Then add cornstarch paste, before adding it into soup, do stir once.

Now mix well and let it simmer for 5-6 minutes or till soup thickens slightly. Add soy sauce and vinegar, mix well and cook for a minute only. Now turn off the stove and pour the soup in a serving bowl and then add fried noodles in it. At last, garnish it with chopped spring onion greens.
